INTRODUCTION

Molecular formula: C6H12O6

CAS number: 551-68-8

Alonose is a low calorie monosaccharide with the taste and texture of sucrose, but with a 90% reduction in calories. Its sweetness is about 70% of sucrose, also known as D-psicose. Aloxone sugar is recognized as GRAS by the US Food and Drug Administration and naturally exists in wheat, figs, raisins and jackfruit. Alonose is not metabolized by the human body, therefore it does not increase blood sugar or insulin levels. Alonose is highly soluble, similar to sucrose, as its solubility increases with temperature.
