Sarcosine is an organic substance with the chemical formula C3H7NO2. It is white orthorhombic crystals with a slightly sweet taste and is hygroscopic. It is soluble in water, slightly soluble in alcohol, and insoluble in ether. It exists in starfish and sea urchins.

It is obtained by decomposing caffeine with barium hydroxide, or by reacting formaldehyde, sodium cyanide and methylamine. It is used in the synthesis of antienzyme agents and can also be used in the synthesis of biochemical reagents.

It is used in biochemical reagents, dye stabilizers, daily chemicals, amino acid surfactants, and health care drugs and fatigue recovery agents.
