N-acetylglucosamine (NAG) is the basic building block of many important polysaccharides in biological cells, especially in the exoskeleton of crustaceans. It is an important prerequisite for the synthesis of bifidobacterial factors and has many important physiological functions in organisms. For example, it can be used as a monomer of chitin and connected through β-1,4-glycosidic bonds to form chitin. The chemical formula is C8H15NO6. It is a white powder. It is easily soluble in water. It has anti-inflammatory, anti-tumor and antioxidant effects. It is a drug for the treatment of osteoarthritis and rheumatoid arthritis in clinical practice. It is widely used in food, medicine and cosmetics. It can be used as a food antioxidant and an additive for infant food, and a sweetener for diabetic patients.
